Scotch Egg

Serve this scotch egg dish with your favourite mustard.


4 hard-boiled large eggs
2 large eggs
1 cup all-purpose flour
1 cup finely crushed bread crumbs
7 oz fresh breakfast sausage (no casing)
vegetable oil (for frying)
kosher salt 
black cracked pepper 
Your favourite mustard for dipping 
Makes: 4


Pour flour and bread crumbs in two separate shallow bowls.  Divide sausage into four equal portions.  Roll and flatten until a thin round patty is formed.  Place one hard-boiled egg on each of the sausage patties and gently wrap the sausage around the egg. 

Whisk eggs in a medium-sized bowl to create a wash. Gently dip sausage wrapped egg into flour, then coat with egg wash and roll in bread crumbs.  Place in fry oil (375°F).  Cook until golden brown. Season with salt and pepper to taste.

Serve with your favourite mustard.
