Prepare the vinaigrette: Whisk together all ingredients in bowl and reserve.
Prepare the pork: In bowl, stir together all ingredients, rub over pork tenderloin. Cover and let stand at least 15 minutes or up to 1 hour. Cut into 1/3-inch thick slices. Heat oil in skillet over medium high heat. Sear pork slices, browning on both sides until cooked through. Toss in 1/3 of reserved vinaigrette. Keep warm.
Prepare the salad: Toss all ingredients together with 1/3 reserved vinaigrette.
In large pot of simmering water, cook noodles for 1 minute. Immediately drizzle with remaining vinaigrette. Serve with pork and top with cilantro salad.
