Warm Noodles with Spicy Marinated Pork and Cilantro Salad with Sweet and Spicy Peanut Vinaigrette

1/4 cup crunchy peanut butter 
1/3 cup apple cider vinegar
1/2 tsp minced fresh ginger
1/2 tsp minced scotch bonnet pepper
1 clove minced garlic
2 Tbsp honey
Pinch salt

2 green onions, thinly sliced
1 Tbsp olive oil
1 tsp apple cider vinegar
1 tsp lime juice
1 clove garlic, minced
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp minced scotch bonnet pepper 
1/4 tsp salt
1-11/2 lb. pork tenderloin
1 tsp canola oil

Cilantro Salad
1/2 cup cilantro leaves
2 Tbsp thinly sliced green onion
1 Tbsp chives, cut in lengths
1/2 scotch bonnet pepper, seeded and thinly sliced

400g fresh Shanghai Noodles
Makes: 4 servings


Prepare the vinaigrette: Whisk together all ingredients in bowl and reserve.

Prepare the pork: In bowl, stir together all ingredients, rub over pork tenderloin. Cover and let stand at least 15 minutes or up to 1 hour. Cut into 1/3-inch thick slices. Heat oil in skillet over medium high heat. Sear pork slices, browning on both sides until cooked through. Toss in 1/3 of reserved vinaigrette. Keep warm.

Prepare the salad: Toss all ingredients together with 1/3 reserved vinaigrette. 

In large pot of simmering water, cook noodles for 1 minute. Immediately drizzle with remaining vinaigrette. Serve with pork and top with cilantro salad.
